I just tried Kahiltna Gold Birch Syrup and it smells and tastes similar to molasses except it is slightly sour. I do not think that it is particularly useful as a root beer ingredient.

I had hoped that it would smell like the freshly peeled bark of Paper Birch trees. Typically, the essential oil of Black Birch, which is basically the same as Wintergreen oil, is used in the manufacture of rootbeer. Although Paper Birch Bark has an entirely different aroma, I like it and I think that it would be potentially useful as a rootbeer ingredient, if only an essential oil could be steam distilled from it. Of course, there might be difficulty getting the FDA to declare oil of Paper Birch GRAS.

Please, perform the following experiment. Paper Birch trees are fairly ubiquitous in the USA. Even in the Chicago area, I estimate that there are several Paper Birch trees per square mile (but, no groves). Find one; peel off some bark and smell the inner surface. What do you think?

the Kahiltna Gold is drawn from paper birch trees, where birch beer i think used to be made from black birch.. could that be the problem?
