Results can be inconsistant trying to force carbonate at room temperature. I have a separate chest refriderator set to 40 degrees that I carbonate in. I set pressure to 12 and leave it for 2 or 3 days ... |

Considering that orange juice can have an alcohol content between 0.2% and 0.5%, I wouldn't be worried.

I've experimented using stevia somewhat and it's best you you ferment the sugar with about half the water until most of the sugar is fermented out. Then brew your roobeer tea with a lot of stevia herb ... |

Commercial root beer is force carbonated in large tanks. No fermentation ever takes place. You can do the same thing yourself at home using a seltzer bottle with a C02 cartridge. |
